Flavours came to Europe from America and Japan, places where have always had a big impact. One need only recall the art of “kodo” (the art of incense), which is very popular in Japan. As early as the 4th century BC, it is described how the Egyptians identified and used perfumes for domestic and public use. During important state events, the Egyptians smoked incense because they were convinced that its scent opened the soul. During the construction of temples in India, essential oils prepared according to secret recipes were added to the mixtures of materials, and this created an atmosphere of freshness, conducive to reflection, tranquility and meditation. They also helped to disinfect the room. To this day, it is a tradition for scented sticks to burn constantly inside any temple.
The Chinese attitude towards scents can best be seen in the letters of the famous Chinese philosopher Wang Wei of the Tang dynasty (618-907) to his pupil: “Aromas have a cleansing and regenerating effect on you, strengthening your energy and filling your body with peace and tranquility.”
In ancient Russia, aromatherapy was traditional and they arranged the so-called Chepuchin chair. A small wooden room (“chepuchina”) saturated with the aroma of steaming herbs, which helped people to heal from illnesses. Women of the bourgeois class loved the musk, as its smell was believed to create an atmosphere of comfort and tranquillity in the home.
These are just a few noteworthy examples of how the effects of aromas have been noted since ancient times. However, the mechanism for recognising and ing smells has remained a mystery until recently.
We now know that olfactory receptor cells send signals to specific formations in the olfactory bulb, after which the impulses enter the cerebral cortex, where the information received from different types of olfactory receptors is combined into a specific set characteristic of each smell. The combination of incoming codes forms a mosaic-like pattern. These olfactory maps our ability to recognise, analyse and store around 10,000 different smells, and this is fascinating, considering that we manage to do this subconsciously, without any effort.
The average urban dweller is confronted with so much audio-visual information that they can no longer digest it. In contrast, the third, olfactory, analyser is much more promising in conveying information under conditions of general overload.
